Roberto Messineo, master roaster

Our roastery is a small artisan reality located at the beginning of the Susa Valley and led by the master Roberto Messineo.

As in all the best artisan activities, the master roaster works, transforms and follows the coffee in all the phases of the roasting process. After a careful and precise selection of the green coffee beans, still raw, we begin to roast: we do it on wood fire, with birch wood, with a docile and regular flame. We roast at lower temperatures and for a longer period compared to common roasteries: we are not interested in having high production yields, but only making the best coffee. We continuously check the beans until their color, their perfume and their “sound” tell us that they are ready.
